Organic saffron crocus
Crocus sativus is the only true saffron crocus and a beautiful sight in late autumn. It flowers around late October and early November when the corm is replanted. Established corms that have been in the ground for a year often flower slightly earlier. The flowers reach about 15 cm in height and are light purple with yellow stamens, providing an important food source for pollinators late in the season. The valuable saffron is found in the three red stigmas of each flower. The narrow leaves are about as tall as the flowers during blooming, but continue to grow until April before naturally dying back.
Do not confuse the saffron crocus with other autumn-flowering crocuses such as Crocus speciosus or the poisonous Colchicum autumnale, which also blooms in autumn.

These large corms contain so much stored energy that they can even flower indoors on a dish without soil or water. Be sure to plant them in the garden immediately after flowering so they can recover and build up strength again.
Harvesting saffron
Saffron is harvested in autumn as soon as the purple flowers appear. The flowers are best picked early in the morning while they are still closed. Carefully remove the three red stigmas from each flower. These threads should be dried immediately, for example in a warm, dry place or in a food dehydrator. After drying, store them in an airtight container in a dark place for at least one month to develop their full flavour.
How, where and when should I plant saffron crocus corms?
Saffron crocus corms are planted from September to October. Plant them at a depth of 2 to 3 times the height of the corm and space them 2 to 3 times the width of the corm apart. Plant them in groups for the best display. A position in full sun is ideal. Make sure they receive at least 6 hours of sunlight per day so they can store enough energy for the following year.
Plant them in fertile, well-drained soil. Loamy soil is acceptable, but a loose sandy soil is preferred. The soil should not be too heavy, as excess moisture can lead to corm rot.
Caring for saffron crocus
The corms can remain in the ground for several years of flowering, provided they are not overcrowded by other plants. For the best results, lift the corms in June or July and store them in a warm, dry place. Replant them in September. Apply an organic fertiliser annually for optimal performance.
Propagating saffron crocus
Crocus sativus does not produce viable seed because it is a sterile triploid hybrid. During flowering, new corms develop on top of the old corm. These can be separated in early summer and replanted in August or September.
